Pepper Steak Caballero |

Ingredients:
1 1/2 pounds sirloin steak -- cut into strips |
1 tablespoon paprika |
2 cloves garlic -- crushed |
2 tablespoons butter |
1 cup sliced green onions -- (use tops also) |
2 medium green peppers -- cut in strips |
2 large fresh tomatoes -- diced |
1 cup beef broth |
1/4 cup water |
3 tablespoons cornstarch |
2 tablespoons soy sauce |
3 cups hot -- cooked rice |

Preparation / Directions:
Sprinkle steak with paprika and allow to stand while fixing other ingredients. Cook steak and garlic in butter until meat is browned. Add onions and green peppers; continue cooking until vegetables are wilted. Add tomatoes and broth; cover and sim- mer about 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak; cook until thickened. Serve over rice.
